“Rahat-Lokum” translates from Turkish as “comforting pieces.” Today, we’ll show you how to make fruity Turkish Delight with nuts.
Ingredients:
1 cup sugar
2 cups water
100 grams peeled nuts
A pinch of vanilla sugar
1 cup powdered sugar
Juicy berries or seedless fruit (strawberries, raspberries, plums, apricots)
1 cup cornstarch
Preparation:
Blend the fruit into a purée.
To one-third of the purée, add the vanilla sugar and 1 cup of water. Heat over low heat.
Mix the remaining purée with the cornstarch and 1 cup of water. Add this mixture to the one already on the heat. Stir and cook for 2–3 minutes. You can substitute potato starch if needed.
Remove from heat and stir in the nuts.
Shape a piece of food wrap into a rectangle, spread the mixture evenly on it. Let it sit for 8 hours, then cut into cubes using a special mold or knife. Dust with powdered sugar.
